Allow us to introduce you to the newest wine venture from acclaimed winemaker Matt Cline.
S3x is the boldly named new label that will initially specialize in small quantities of a Botrytis white Riesling late harvest dessert wine from the Russian River Valley.
Named for the way it should be enjoyed - small, sweet sips - S3x is a rare wine produced only when the perfect conditions permit. That is, when a natural mold called Botrytis cinerea, or "noble rot" as it is illustriously known, infects the grape clusters in the vineyard.
The phenomenon of botrytis causes the grapes to shrivel as water evaporates through the weakened skin, resulting in an intensely sweet and concentrated juice. Of course, on the rare occasions when Botrytis occurs, only small amounts of wine can be produced due to the very limited supply of juice - making it all the more special.
